Californian born owner, developer and farmer Spike Dessert fell in love with the Kimberley when he saw it in 1972. In 1995 with the onset of Sugar Cane being grown in the Ord River Valley, he saw a way to diversify his dream and created the Hoochery – the oldest continuously operating distillery in Western Australia.
Built on his farm just outside of Kununurra in the heart of the beautiful Ord River Valley is a small pot distillery, which has the capacity to produce over 50,000 bottles a year. The Ord River Rum is made from local sugar cane, wet season rainwater and yeast that is all vat fermented, pot distilled, charcoal filtered, aged in oak barrels and hand bottled. The distillery is 100% Australian owned and operated.
Expanding from rum, the venture now includes whisky.
Raymond B. 100% Corn Whiskey 40%
Reputedly the only Australian distillery to mill their own 100% corn mash spirit, filtered through plantation mahogany charcoal, aged in lightly toasted oak and reduced with monsoonal rainwater before bottling.
Tasting note: Bright gold. Nosing finds an unusual combination of furniture wax and light corn chip over an underlying fruity base, reminiscent of orange sponge cake. Second pass finds added sweetness accenting jaffa and vanilla, following through with a concentrated, medium dry, fruity delivery with jaffa and spice emphasised before the oaky dryness kicks in. Expressive and different.

Lark Distillery was established in 1992 as the first licensed distillery in Tasmania since 1839. It was established to produce Tasmanian single malt whisky, rich in character with a big finish using the finest Tasmanian ingredients. Lark Distillery is very proudly a boutique distillery dedicated to high-quality single malt whisky and many other unique Tasmanian spirits. Bill (Father of Australian Whisky) and Lyn Lark, who founded Lark Distillery sold a majority stake to a syndicate of investors in 2017. They continue in their roles as Lark global brand ambassador and non-executive director respectively while Australian Whisky Holding (AWH) holds approximately 99.69% of the shares in the Lark Distillery group. Lark whisky is unique in character and style, crafted in small batches exclusively from pure Tasmanian ingredients. All Lark whisky is matured in small barrels and hand-bottled.
Lark Single Malt Whiskey Classic Cask 43%
Lark Classic Cask is double-distilled in locally crafted copper-pot stills and aged in carefully selected small casks. Presently Lark’s whiskies are matured in reformed Australian Port and Sherry “Quarter Cask” barrels of around 100 litre capacity. The increased whisky to wood contact helps speed up the maturation process.
Tasting Notes: A great balance of sweet, spicy and savoury elements make this the perfect everyday whisky. It features the citrus and butterscotch of the Lark house style with a hint of Tasmanian peat. Piney palate almost foresty taste.
In the spirit of creativity Distiller’s Selection releases are specially selected by the distillers as whiskies that are intriguing and different, showing unique flavours outside of Lark house style. It is a single cask release and the third expression in their single malt range. the first from the new Distillers Selection series launched in May 2018 the casks yield around 500 bottlings.
The Lark Cask Strength 58%
The Lark Cask Strength is old-school Lark. Entirely made by hand with no more than 100 liters at a time, The Cask Strength expression is widely regarded as ‘one of the world’s best cask strength whiskies. Double-distilled and matured in small casks, the Cask Strength features big flavours of dried fruit and butterscotch, a huge port cask influence, and hints of maple syrup with sweet notes of Tasmanian highland peat. The Overeem Distillery began as a family-owned and operated business, headed by Casey Overeem and daughter Jane. Following years of research and experimentation, Overeem Whisky emerged in 2007 as a new world whisky filling 100 ltr port and sherry casks. In 2013 the Overeem family distillery (Old Hobart Distillery) was sold and became White Label Distillery, a contract distillery headed by Anthony White with Casey as mentor and advisor. After beginning life as a family-run business, Overeem was bought by Lark Distillery in 2014 relocating to the heart of the Coal River Valley. Subsequently they are magority owned by AWH (99.69%). The brand is still separate, and whisky is still produced separately. While Casey is semi-retired he is still the brands ambassador. Every Overeem Whisky expression is exclusively single cask, handcrafted single malt, and patiently matured in selected 100L French and American Oak casks plus hand-bottled and numbered as limited edition.
The Overeem Port Cask Single Malt 60% & 43%
The Port Cask Matured Single Malt is aged in an ex Port, French oak barrel. Some of them contained premium port which was 50 years old or even older. These hand-selected barrels have been cut down to 100 litre (quarter cask) capacity. Bottled at either 60% abv (cask strength) or 43% abv. This is a hand-crafted, Single Cask, single malt whisky, with no chill filtration or colouring and are individually labelled with barrel and bottle numbers.
Tasting Notes: The Nose is vanilla slice, cinnamon sticks, cedar, rosewater and orange zest. Pallet continues with Hints of creme brule, nougat, sandalwood, allspice, bitter orange marmalade and gingersnap. But overall its richly complex, yet elegant.
The Overeem Sherry Cask Matured Single Malt 60% & 43%
The Sherry Cask Matured Single Malt is made with 100% malted barley, hand crafted and aged at least five years in French Oak Sherry quarter cask. Prices vary widely if you’re lucky enough to find a bottle coming out of 100ltr casks. Bottled at either 60% abv (cask strength) or 43% abv. This is a hand-crafted, Single Cask, single malt whisky, with no chill filtration or colouring and are individually labelled with barrel and bottle numbers.
Tasting Notes: Butter menthol top notes. With some air, vanilla / malt aromas followed by heavier Christmas cake / dried fruit scents. Wispy, silky entry leads into a soft, pure, light to medium bodied palate; medium dry flavours of barley sugar and butter menthol repeat accompanied by gentle spices and continue well into the aftertaste. Description: This distillery, brewery and bar is the first in its area and is situated at over a kilometre above sea level. Apart from making spirits and beers Eastview Estate is also the home of Restaurant PINOT, featuring local produce presented in innovative ways by chef Lyn Dobson. Eastview Estate has a purpose built distillery, to produce its range of spirits. They also craft brew eight all grain beers on site. Eastview Estate is blessed with unique terroir with the combination of altitude and the convergence of the continental and maritime weather patterns.
Dobson’s Old Reliable 42%
Old Reliable single malt whiskey is one of the lighter whiskies in the Dobson’s range. Made in the Celtic-Irish style it’s triple-distilled and comes in at 40% alc. Lightly peated and matured in French ex-shiraz oak. Old Reliable is released every 6 months or when head distiller, Stephen Dobson’s deems it ready to bottle.
Tasting Notes: Pours a slightly pale, medium amber / gold colour and issues frail scents of creamy soda, vanilla custard and hints at pineapple pudding. Lighter-styled, in the tradition of entry level Canadian ryes or Irish blends, this is graceful and silky in the mouth with vanilla wafer, light fruit’n’nut chocolate and gentle cinnamon / pepper warmth. Turns drier to finish with subdued vanilla custard notes in the aftertaste.
Dobson’s Belle Epoque Single Malt 60%
The Belle Epoque single malt cask strength whisky is double distilled spirit is made with 100% barley from Baird’s malt house located in a small New South Wales town called Inverness. Dobson’s uses a wide range of techniques including micro-oxygenation, steam-filtration and more.
Tasting notes: Deep, copper coin coloured 100% barley whisky offers a huge bouquet of vapoury alcohol, walnut fudge, mandarine peel and dark chocolate. The balance also impresses at high ABV. Initial barley is offset by prolonged bittersweetness, gaining ground at the finish with an intense peak of cream tea biscuits, orange peel, pipe tobacco, understated sooty/smokey notes and a warming, burnt orange aftertaste that goes on at length.
Dobson’s Empire 8 Cask Strength 60%
Empire 8 Cask Strength is Aged in a combination of casks, including x Shiraz, x Madeira and x Chardonnay barrels. Triple-distilled in an Irish-style, the whisky then sits in stainless-steel with oak slabs for four months, before being matured in a shiraz cask for two years, a madeira cask for two years, and a chardonnay cask for two years. Made with Baird’s malt, supposedly the name comes from the number 8 being a lucky number in China.
Tasting notes: Bold aromas of orange cake in the opening nose; air contact drops the primary note, adding cinnamon and spicy fruit cake. A burst of bittersweet peel, fruit cake and peppery alcohol followed by a trace of match book. Ends gently bittersweet, spiced-up yet fresh with lingering orange zest, fruit’n’nut chocolate and sweet spices in the fade. Solid boozy number, deliciouse.
Black Gate Distillery

Description: Established 2009 in a rural setting and a climate conducive to aggressive spirit maturation Black Gate produce Single Malt Whisky and Dark Rum which are both brewed and distilled on site. The distillery capacity is around 3000 litres of whisky and about 1000 litres of rum annually. They use direct fired copper pot stills of 630 litres and 300 litres capacity that produce spirit on the richer end of the flavour spectrum. They pretty much stick with traditional methods and aim to use local grains and fruits for all of their products. Often single cask, Brian and Genise Hollingworth are currently managing to fill just 15 casks a year – that’s well up on the original three-or-so they were managing – hence the demand for their releases.
Black Gate Distillery Single Cask Single Malt Australian Whisky 50%
Black Gate Single Cask Single Malt Whisky is double-distilled in a copper pot-still and is matured in ex-sherry casks (100ltr). Excitingly, batches vary as they experiment with peat and time spent in barrels showcasing the team’s creativity and proving to be a great collector’s items. Often selling out of altercation the outturn of bottlings is often around only 150 – 250. Special stuff.
Black Gate Distillery Rum Cask Single Malt Australian Whisky 50%
Black Gate Rum Cask Single Malt Whisky is a single cask release was drawn from what was originally a sherry cask, it was used to mature Black Gate’s rum before it was refilled with whisky new make. Essentially a refill cask its up there with the longest maturation so far in the country climate. Limited release of only 200 bottles and non-chill filtered and with no added colour, owners Brian and Genise are currently producing some of the highest quality small-batch whisky in Australia.
Black Gate Hybrid Cask Single Malt Whisky 46.7%
Black Gate Hybrid Cask Single Malt Whisky is matured in a hybrid cask of port staves and red wine heads for three years, at 46.7%abv this is perhaps the tamest release yet. Full of flavour, syrupy and sweet with hints of spice.
Black Gate Peated Single Malt Whisky 63.6%
Black Gate Peated Single Malt Whisky is distilled using peated malt from Scotland, this whiskey has been matured in an ex-sherry cask and bottled at 63.6% straight from the cask. Rich, sweet and smokey. Big, bold and rich with a defining smokey kick. Distilled July 2016, it was bottled August 2018 and launched at Sydney Whisky Fair. 177 bottles in this expression.
Tasting: The nose is rich and sweet, with only the hint of peat, but the smoke charges through on the palate and lingers well into the finish. A rare example of an Aussie whisky that has held a considerable amount of smoke.

Established in 2004, Great Southern Distillery is presently Western Australia’s only Single Malt Whisky producer. Their product labelled ‘Limeburners’ is named after an area close to the distillery, ‘Limeburners Creek’.
“Our unique points are (1) pristine environment, (2) access to world class malting barley, pristine water, and a cool marine climate for the slow maturation of our whisky” says Symes.“
Bavarian born, Juergen Schludi is the Master Distiller at Great Southern, with more than sixteen years experience in the distillation of spirits, flavours and essences. But Syme also insists on getting involved with the distilling. The production process is unusual in that it employs a 7-10 day fermentation period, much longer than most, but at Great Southern, they believe it allows for the development of more fruity characteristics. Small batch distillation takes place in traditional copper pot stills and as with most micro-distilleries, only individual barrel expressions are released.
Wood selection is unusual. For example, this years Limeburners release (M6) has been matured in a small Brandy cask, then finished in a French oak ex- Pinot Noir barrel. Bourbon, Australian Port, Sherry, and ex-table wine barrels from Margaret River and Great Southern region are also used.
Limeburners Single Malt Peated Whisky 48%
This whisky has been made using a peat from near the ‘Valley of the Giants’ near Tingledale WA. Matured in an ex-Bourbon American Oak casks. Entry-level Australian whisky that enjoys a creamy texture and boiled candy flavours plus a concentrated spicy paprika finish. Decedent hints of dark chocolate are smooth.
Tasting notes: Very pale straw gold appearance. Lovely semi sweet fruity / banana cake-like notes in the opening phase are followed by lighter, drier styled aromatics in later passes including suggestions of brandy cream and fruit mince pie. A light entry leads into a cream-textured mid palate with boiled lolly-like flavours and a more concentrated drying paprika sensation at the finish. Hints of dark chocolate and vanilla in the aftertaste, but the peat is indiscernible.
Limeburners Single Malt Whisky Darkest Winter 65.1%
Multi award winning, Darkest Winter uses peat collected by hand from the deepest darkest parts of the Valley of the Giants. The barley was smoked for an extended period, resulting in a heavier, more intense style of whisky ideally suited for darkest winter. This whisky was matured in an ex-bourbon American Oak cask.
Tasting Notes: spice and floral aromas when neat and a splash of water unleashes malted barley and intense complex smokey aromas.
Limeburners Sherry Cask Single Malt Australian Whisky 43%
This complex and elegant single malt whisky is distilled in traditional small batch copper pot stills from local barley. It is matured in second fill bourbon barrels and finished in very old, small sherry cask. Limeburners Sherry is a medium coloured whisky with intense and complex flavours
Tasting Notes: Exhibiting spice and fruit aromas when neat, a splash of water unleashes malted barley, aromas of sherry and vanilla with hints of honey, raisins and buttery caramel.
Limeburners Single Malt Whisky Port Cask 43%
Limeburners Single Malt Whisky is distilled in traditional small batch copper pot stills from local barley then matured in a 200 litre American Bourbon Cask and finished in an Australian Port cask.
Tasting Notes: Exhibiting spice and fruit aromas when neat, a splash of water unleashes malted barley, aromas of vanilla and port with hints of honey, raisins and warm spices.
Limeburners Single Malt Whisky American Oak 43%
A crowed favourite, this Limeburners whisky was matured in refill American oak bourbon barrels.
Tasting Notes: American Oak exhibits gentle citrus and honey aromas and has a bright, golden colour with a bold, full flavour, upfront spice, vanilla notes and a medium to long finish.
